Asian Delight: Recipe for Chicken in Peanut Butter Sauce

Chicken in Peanut Butter Sauce

Ingredients
- 3 Tbsp canola oil
- 600 g chicken (cubed)
- 1 garlic clove
- 1 tsp ginger (grated)
- Red pepper flakes (to taste)
- 400 g tomates (diced)
- 400 ml coconut milk
- 100 g pure peanut butter
- 2 tsp garam masala
- 1 Tbsp fresh cilantro (chopped)
- 1 Tbsp chopped peanuts
Instructions
- Heat 2 Tbsp of canola oil in a pan and cook the chicken cubes. Put them aside in a bowl.
- Now add 1 Tbsp of oil in the same pan. Press the garlic into the pan and heat together with the red pepper flakes and ginger.
- Then add the tomatoes, coconut milk, and peanut butter one at a time. Season with 2 tsp of garam masala. Let the sauce simmer for a few minutes.
- Then add the chicken and the chopped cilantro.
- Our tip: serve the peanut butter coconut chicken over rice and top with crushed peanuts.
