Fluffy Protein Pancakes (Not Just for Breakfast Anymore)

Finding the perfect pancake recipe can be quite tricky: You often have to try out a lot of recipes before you discover the right one for you. After conducting our own search, we are happy to announce that we found the perfect recipe for you! It simply doesn’t get better than these fluffy protein pancakes 😉 Especially if you eat them with some fresh seasonal fruit.

Ingredients for 4 pancakes (1 serving):

  • 2 eggs
  • 40 g rolled oats
  • 75 g low-fat cottage cheese
  • vanilla (ground)
  • ¼ tsp. cinnamon

Directions:

Mix all the ingredients in a blender until smooth. Heat some coconut oil in a pan and cook the pancakes until golden brown. You can top them with all your favorite things: We like to eat them with juicy strawberries and some maple syrup. Enjoy!

One serving of pancakes (without topping) contains about 340 calories, 26 g of carbohydrates, 27 g of protein and 13 g of fat.
