Fruity Quinoa Salad: Perfect for Your BBQ (and Vegan too!)

Quinoa Salad

Summer is rapidly approaching and with it BBQ season. Maybe you are already looking for some suitable meals and side dishes. Today, we have a recipe for a fruity quinoa salad that is sure to thrill you and your guests (including the meat lovers!). The fresh orange harmonizes with the sweet corn and the spicy red onion. A guaranteed taste sensation!

Ingredients for one big bowl (serves about 4)

      • 180 g quinoa
      • 2 organic oranges (peeled and cut)
      • 1 red bell pepper (diced)
      • 200 g kidney beans
      • 100 g corn
      • 1 red onion (chopped)
      • 2 Tbsp. chopped coriander/cilantro
      • salt and pepper

Ingredients for dressing:

        • 40 ml olive oil
        • 50 ml apple vinegar
        • 50 ml orange juice
        • zest of 1 organic orange
        • 1 Tbsp. agave syrup

Directions:
Cook the quinoa according to the package instructions in twice as much water for 15-20 minutes and then let cool. Combine the oranges, the diced bell pepper, beans, corn, onion and coriander.

Mix the ingredients of the dressing together and pour it over the quinoa. Combine everything together and toss well before serving! Enjoy your salad 😉

One serving of quinoa salad contains about 260 kcal, 52 g of carbohydrates, 8 g of protein and 9 g of fat.
