Get Healthier Skin With This Anti-Aging Salad

Let’s assume you could naturally keep your skin young and vital. That would be good news, right? Well, it actually works. Now that the hours of sun are increasing, our skin needs our support. So-called beauty food is our best ally. We prepared a list of the most effective ingredients and packed them into a delicious recipe so you can get healthier skin.
Feel-Good Anti-Aging Salad
Ingredients
makes 1 portion
Dressing
- 2-3 tbsp Greek yogurt
- ¼ avocado
- 1 tbsp oil (e.g. grapeseed, avocado or olive oil)
- 1 tbsp vinegar
a dash of lemon juice
salt, pepper
chives, herbs
Salad
- 1 small bowl mixed greens
- 1-2 large tomatoes
- 1 small carrot
- 1/4c kidney beans (canned is okay)
Topping
- 1-2 tbsp sunflower seeds
- a small handful walnuts
- 1 hard-boiled egg
- 1-2 slices whole-grain bread
Preparation
Thoroughly rinse your veggies under cold water. Rip your salad leaves in pieces and throw them in a big bowl. Peel and grate your carrot. Halve the tomatoes, cut out the stalk and slice. Rinse the canned kidney beans and add them, tomatoes and carrot, to the bowl.
For the Dressing, mash the avocado with a fork and puree using a food processor. Mix the pureed avocado, yoghurt, oil, vinegar and lemon juice. Season with salt, pepper and finely chopped herbs. If it’s too thick, dilute your dressing with a little water or lemon juice. Dress your salad right before eating and mix well.
Chop the walnuts and sprinkle, together with the sunflower seeds, over your salad. Peel and cut the egg into wedges to add to your salad with.
You can either accompany your salad with the whole-grain bread, or prepare crunchy croutons: Toast the bread slices in your oven or toaster until crisp and cut into small squares. Scatter them over your salad to give it the finishing touch.
