A Healthy Power Snack: Ursula’s Sweet Treat

Ursula, our “Good Fairy” in the Runtastic office, wows us with healthy treats on a regular basis. Her naturally sweet power snack keeps us fit & awake, and might be the most cherished treat around here:

Runtastic Nutrition

Ingredients:

2 cups (250g) shredded carrots
¼ cup (50g) shredded zucchini
1 cup (150g) raisins
⅓ cup (80 ml) oil (vegetable or coconut)
½ cup (150g) honey
½ tsp cinnamon
1 tsp salt
2 ½ cup (300g) oatmeal
1 ½ tsp baking powder
1 cup (120g) walnuts, chopped
2 ¼ cup (250ml) water

Directions:
Preheat oven to 300°F (150°C). Wash the carrots and zucchini, cut off the ends and grate. Mix with 2 ¼ cup (250ml) water and all other ingredients. Evenly spread the batter on a lined baking sheet. Bake at 300°F (150°C) for approx. 50-60 minutes.

 Cut into squares or bars & enjoy!
