Looking for a new, healthy twist to Tex Mex? This recipe for beef tacos is delicious, low carb, and high in protein which makes it the perfect evening snack.

If you want to eat a healthy diet or lose weight, that doesn’t mean you have to eat low carb meals. Carbohydrates are one of the three macronutrients. They provide your body with energy and are especially important for athletes. But on those days when you don’t get much exercise, have already consumed enough carbs, or just feel like trying something new, this low carb recipe is a great option.

Low Carb: Lettuce Wrapped Beef Tacos

Ingredients for Two Servings:

  • 1 onion
  • 1 garlic clove
  • 1 Tbsp canola oil
  • 350 g ground beef
  • 1 tsp red pepper flakes
  • ½ tsp ground caraway seeds
  • 1  tsp cayenne pepper
  • Salt (to taste)
  • 4 leaves of lettuce
  • 4 tsp of salsa
  • Juice of ½ a lime

Instructions:

  1. Dice the onion. Sauté it in canola oil until translucent and then press the garlic into the pan. 
  2. Brown the ground beef in the pan and mix in the spices.
  3. Rinse the lettuce. Fill the lettuce leaves with the ground beef and add salsa on top of the beef tacos. Drizzle lime juice over the top and serve.

One serving has 420 calories, 7 g of carbohydrates, 33 g of protein and 36 g of fat.
