Power-Packed Post-Workout Meal: Salad with Steak & Avocado

Not your old meat and potatoes: this unbeatable combination of protein-packed rib-eye, mixed veggies and avocado is a refreshing take on steak. Whip up this healthy and tasty meal after your next workout!

Ingredients (serves 2):

  • 250 g rib-eye steak
  • 1 Tbsp vegetable oil (e.g. canola oil)
  • 100 g lettuce
  • 1 onion (cut in rings)
  • 150 g corn
  • 200 g kidney beans (cooked)
  • 1 bell pepper (diced)
  • 100 g cherry tomatoes (halved)
  • ½ avocado
  • Salt & pepper (to taste)

Ingredients for the dressing:

  • 1 bunch of cilantro
  • 1 avocado
  • Juice of 1 lime
  • 1 Tbsp red wine vinegar
  • 1 Tbsp olive oil
  • Crushed red pepper flakes (to taste)
  • Salt & pepper (to taste)

Directions:

1. Blend all the ingredients for the dressing in a blender until smooth.
2. Toss the lettuce, onion, corn, kidney beans, bell pepper, cherry tomatoes and dressing in a bowl.
3. Heat the canola oil in a pan. When the pan is hot, drop the steak in the pan. Season the meat with salt and pepper. Cook the meat on high heat for 2 minutes per side.
>4. Top the salad with steak and avocado strips.

One serving has 650 calories, 35 g of carbohydrates, 38 g of protein and 33 g of fat.
