Chocolate Cake with Berries, Ginger & Fruit Sauce
Ingredients
Cake
- 1 egg
- ½ cup sugar
- 4 TBS vegetable oil (e.g. rapeseed oil)
- 1 cup buttermilk
- 1 cup oats
- 1 cup flour
- 1-2 TSP baking powder
- ½ TSP salt
- ½ cup cocoa powder
- 1 TSP freshly grated ginger
- 1 cup berries (fresh or frozen)
- a little oil or butter for greasing
- berries, fresh mint, icing sugar, etc. as garnish
Fruit sauce
- 300-400 g mixed berries (frozen)
- sugar or sweetener, optional
- lemon juice, fresh mint, etc. to taste
Preparation
Before starting, allow the rolled oats to soak in buttermilk for approx. 45 minutes. If you use frozen berries, take them out of the freezer so they can begin to thaw a bit.
Preheat your oven to 200°C and mix all dry ingredients, except sugar (flour, cocoa, baking powder, salt), in a bowl. Beat egg and sugar until frothy, then stir in the oil. Next, add the rolled oats and buttermilk mixture, the grated ginger and finally the dry ingredients. Whisk until smooth.
Then, gently fold in the berries until evenly distributed. Pour the batter into a greased, heart-shaped baking pan or choose the man/woman of your dreams:

Alternatively, pour the batter into a regular cake pan and use a knife to cut out creative shapes after baking!
Bake for approx. 30 to 35 minutes. Make sure your cake is done before you take it out by inserting a toothpick or skewer – it should come out clean.
While the cake is in your oven, prepare a quick fruit sauce. A sauce based on mixed berries fits perfectly, but you can use whichever fruit you like. Puree the fruit in a blender or with an immersion blender and sweeten, if necessary, with a little sugar or sweetener. Some lemon juice, fresh mint and other fresh/tart ingredients can add a special touch to your sauce – get creative!
If you prefer your fruity sauce without seeds, strain mixture through a sieve.
