Ingredients
For the salad
- 250 g rib-eye steak
- 1 Tbsp vegetable oil (e.g. canola oil)
- 100 g lettuce
- 1 onion (cut in rings)
- 150 g corn
- 200 g kidney beans (cooked)
- 1 bell pepper (diced)
- 100 g cherry tomatoes (halved)
- ½ avocado
- Salt & pepper (to taste)
For the dressing
- 1 bunch of cilantro
- 1 avocado
- Juice of 1 lime
- 1 Tbsp red wine vinegar
- 1 Tbsp olive oil
- Crushed red pepper flakes (to taste)
- Salt & pepper (to taste)
Instructions
- Blend all the ingredients for the dressing in a blender until smooth.
- Toss the lettuce, onion, corn, kidney beans, bell pepper, cherry tomatoes and dressing in a bowl.
- Heat the canola oil in a pan. When the pan is hot, drop the steak in the pan. Season the meat with salt and pepper. Cook the meat on high heat for 2 minutes per side.
- Top the salad with steak and avocado strips.
One serving has 650 calories, 35 g of carbohydrates, 38 g of protein and 33 g of fat.
