Ursula’s DeLIGHTful, Super Low-Carb Bread
Ursula, our “Good Fairy” in the Runtastic office, wows us with healthy treats on a regular basis. This one was so incredible, we just had to share her light, yummy & low-carb bread with you:
50g plain yogurt
200g ground almonds (contains some carbs)
50g sunflower seeds
50g sesame seeds
walnuts, chopped (add to your taste)
½ tsp salt
1-2 Tbsp chia seeds
bread seasoning, optional
* Ursula uses rapeseed oil, as it’s neutral in taste
Preheat your oven to 170° C / 340° F. Add your chia seeds to the yoghurt and let them soak a bit, then mix in the egg yolks. Beat the egg whites until stiff, then fold in the yoghurt mixture. Now add all remaining ingredients, fill the mixture in a baking dish and bake at 170° C / 340° F for about 1 hour.
(presuming you use 32g of chopped walnuts, 1.5 Tbsp of chia seeds, rapeseed oil)
