Power-Packed Vegan Energy Balls

Vegan energy balls

We all know the afternoon slump: The time between lunch and dinner often feels like an eternity. These tasty energy balls are perfect for those hunger pangs in between meals. They are prepared in a jiffy, don’t require any baking and, if you make them on Sunday, you can enjoy them the whole week. This mix of fiber, protein and valuable fatty acids is a quick source of long-lasting energy. Plus, the small energy bombs are vegan and a great option for a pre-workout snack.

Ingredients for 10 balls:

  • 45 g coconut flakes
  • 60 g rolled oats
  • 35 g ground flaxseeds
  • 30 g chopped almonds
  • 150 g almond butter
  • 50 g maple syrup

For sprinkling:

  • Pistachios
  • Coconut flakes

Directions:
Put the dry ingredients in a bowl. Mix them with the almond butter and maple syrup until they form a thick dough consistency. Roll the mixture into several small balls. Tip: If you wet your hands, the vegan energy balls are easier to roll and the dough doesn’t stick to your fingers. Once you are done shaping the balls, you can roll them in the chopped pistachios and coconut flakes. These delicious energy bombs can be enjoyed for several days if stored in the refrigerator.

One energy ball contains 195 calories, 8 g of carbohydrates, 6 g of protein and 10 g of fat.
